Walk around MIL, guided by local wise farmers, in the Moray ecosystem - connecting with the botanical diversity of the environment and the ingredients that give rise to our tasting menu.
Six stations to cover territory, history, landscapes, and local culture:
Outside of MIL
[01] Moray
The tour begins next to the Inca archaeological site of Moray. From the panoramic view of its circular terraces, we will share hypotheses about its origin and purpose.
[02] Botanical inspection walk
The walk through the hills surrounding MIL reveals edible, dye, and medicinal plants, while local experts share their ancestral knowledge and uses in their daily lives.
[03] Crops
The next stop is our chacra (farming lands), where you will learn about ingredients that give rise to the tasting menu and are fundamental to life in the Andes. These are products cultivated by the neighboring communities of Mullak’as-Misminay and K’acllaraccay, which maintain an essential link with Andean identity.
[04] Warmi Station
Two women from the Warmi artisan collective of K’acllaraccay will share dyeing techniques with local botanicals and mordants according to Andean textile knowledge, showing how the ingredients from the environment are transformed into new expressions.
Inside MIL
[05] Drinks and spirits
The tour culminates with a tasting of beverages made from tubers, grains, and roots, reinterpreted from a contemporary perspective. You will experience new colors, textures, and flavors, thanks to roots, tubers, legumes, leaves, flowers, among other local seasonal ingredients.
[06] MIL World (Tasting Menu)
Inspired by this journey, you will discover the gastronomic proposal of MIL, where the journey takes shape in eight moments that present ecosystems of the heights of the Andes and the Amazon of the Cusco region. Optional pairing.
