Each dish is born from the joint work with the farm, integrating seasonal inputs, ancestral techniques, and shared knowledge.

The tasting menu is presented in two versions: regular and vegetarian, both built from native ingredients and products cultivated at altitude. Each moment evolves constantly according to what the land offers in each cycle.
